Peanut Butter S'mores Bars #Recipe

In case any of you have been oblivious to the Pinterest explosion of smores recipes tomorrow is National S'mores Day! How great is it that we have a whole day dedicated to eating melted marshmallows and chocolate sandwiched between graham crackers? Pretty darn great! Earlier this week when my BlogHer roomie and long time blog friend Erin posted a recipe for S'mores Chocolate Chip Cookie Bars and informed me that National S'mores Day was a comin' I knew I had to make a sweet treat to celebrate!

Enter these little beauties!

Shut the front door. These are amazing and let me tell you -- my alternate title was "Ridiculousness in a Pan!" This is a super easy must-try recipe. Trust me on this.

What You Need:

  • 2 cups of graham cracker crumbs. Make these by placing the graham crackers in a plastic bag and crushing them using a rolling pin.
  • 1 stick of butter, melted.
  • 1 1/12 cups of peanut butter
  • 1 1/4 cups of confectioner's sugar
  • 1 bag of marshmallows
  • 3/4 of a bag of milk chocolate chips (I'm a s'mores purist so I splurged on the Hershey's brand - so worth it!)
  • mini peanut butter cups
What You Need to Do:

  • Pre-heat oven to 375.
  • In a large bowl combine graham cracker crumbs, peanut butter, butter and confectioner's sugar. Mix well. 
  • Grease a pyrex dish. If you want the peanut butter cracker layer to be thinner use a larger dish. I wanted mine to be thicker so I used a smaller dish! 
  • Press the peanut butter mixture into the bottom of the pyrex and top with the bag of marshmallows. 
  • Bake in oven for 7-10 minutes. 
  • Optional: if you like your marshmallows more toasty, like I do, let the dish sit under the broiler for a few minutes. Watch closely so that they don't burn!

  • While the marshmallows bake microwave the chocolate chips in a small bowl until melted. Make sure to microwave on shorter intervals so that you don't scorch the chocolate. 
  • After the bars come out of the oven drizzle the melted chocolate all over the top of the marshmallows. 
  • Scatter mini-peanut butter cups over the top of the chocolate. 
  • Let cool to room temp and ENJOY!
