Pretty in Pink Strawberry Lemonade #Recipe

As Summer is starting to wind down (although you wouldn't know it with this heat) I find myself rushing to make food and drinks with all the bright beautiful tastes and colors of the abundant fresh produce. Recently Evie has been into "mel-aide" (which is toddlerese for lemonade). She's also been digging on red ripe juicy strawberries. One lazy Summer day I decided to combine them for her. She loved it!
 
Not too sweet, and not too sour, this recipe is super easy and only has four ingredients!
 
 
 
 

What You Need:
 
  • 4 cups of water, divided
  • 1 1/2 cups of sugar, divided
  • 2 cups of fresh ripe strawberries, hulled
  • 1 cup of fresh lemon juice, (4-6 lemons)
 
What You Need to Do:
 
  • In a small sauce pan, combine 1 cup of water and 1 cup of sugar. Heat until sugar dissolves completely. Set aside to cool.
  • Combine remaining water, sugar and strawberries together in a blender and blend until smooth.
  • Stir lemon juice into strawberry mixture. Taste. Add more lemon or sugar to taste.
  • Fill a large pitcher with ice, pour lemonade over ice to chill and serve.
  • Keeps well in refrigerator for 3-4 days, if it lasts that long!
