Buffalo Chicken Wonton Cup #Recipe

With Fall comes a desire to eat all things tailgate, and lately I've been craving buffalo wings. The only problem is the messy fingers and the fact that my two year old can't eat them! I've seen a variety of buffalo chicken wonton cup recipes around Pinterest so I thought I would try my hand at making my own!
These came out crispy, tangy and delicious! They are perfect for a quick dinner served with a salad or fruit and great as an appetizer too!
What You Need:
  • cooking spray
  • 12 small wonton wrappers
  • 2 cups of shredded chicken (we used left over rotisserie chicken)
  • 1/4 cup ranch dressing
  • 1/4 cup of buffalo sauce (Franks. We put that %&@* on everything!)
  • cayenne pepper, to taste
  • 1/2 cup + 2TBS shredded cheddar cheese, divided
  • blue cheese crumbles
  • 1-2 green onions, sliced
  • Shredded carrot
  • additional dressing of your choice
What You Need to Do:
  • Preheat your oven to 375F
  • Spray the wells of a standard muffin tin with a bit of non-stick spray. Don't go overboard or your wontons will end up greasy.
  • Gently press a wonton into each well and up the sides
  • Bake wontons for 5-6 minutes
  • Remove from the oven and set aside
  • In a small bowl mix, chicken, ranch dressing, buffalo sauce, 1/2 cup shredded cheddar cheese and cayenne pepper (to taste) together.
  • Spoon filling evenly into wonton cups.
  • Top with remaining cheddar cheese
  • Pop back in the oven and baken 9-11 minutes until the wontons are golden and crispy and the cheese is melted.
  • Remove from oven and place on serving platter.
  • Garnish with blue cheese crumbles, shredded carrot, and green onions.
  • Serve immediately with either ranch or blue cheese dressing for dipping!
  • PRO TIP: If you've got a toddler who'll be joining you for a party or for dinner set aside a separate bowl of chicken for them, and either mix in a teeny tiny bit of buffalo sauce or none at all. We used about 1/2 a tsp for Evie and she was fine.
